Meal #7 - Roasted Turkey

I actually roasted a turkey. Mini, boneless turkey. Me.
Rubbed with rosemary, paprika and of course Dr. Duck spices.

The turkey took a bit to cook, so I made bruschetta with fresh tomatoes and whole wheat bread (it's all I had and I was working on the fly.

Have a date with the girls tonight and meeting them at Mamma Melina's - a fan favorite of mine. But before I left, I made Scott a tomato based vegitable soup.

Had some zucchini and squash about to go bad, some of the Davies stewed tomatoes left, mini bow tie pasta and some frozen veggies - 2o min later and I had made my huband dinner.

Impressing, even myself now.

Forgot the milk when making the meatballs (which I did the night before). So they crumbled and it became ground turkey spaghetti.

Secret Ingredient: Fresh stewed tomatoes from Davies garden in GA. Fresh and flavoring the sauce. And there is more!!

The chicken turned out nice - I would use this on legs next time. The corn & peppers weren't spicy and lacked flavor.

This was a meal in itself - couldn't think of anything to make with it. Pointless in making rice or noodles - we had the quinoa. Full of vegitables and protein.

Meal #1 - Chili + Cornbread

Chili + Cornbread
For some reason we cannot get away from the southern comforts.

For Christmas, Dad & Regan gave us a box full of Texas made foods. Including Texas Chili Mix. We hit up the Ballard Farmers Market for fresh ground beef and potent onions.

Meal Rewards: lasted 4 meals
The Scott Man Review: 3 stars, average. "I've had better Chili but it kept me regular"

Here We Go...

2010 I vow to make dinner instead of eating out for many reasons:
- I am challenged by this industry
- I am practically a stay at home wife right now with no kids. The least I can do is make my husband dinner each night
- Since I am not working, I can no longer justify eating out 6-7 days a week (which had become our norm)

Armed with a new food saver from my parents, 4 years of Martha Stewart Everyday FOOD mini catalogs and a trusty assistant, the experiment begins.
